For him, it’s all about getting finding the best balance for each wine, and with the tight granite soils of Strathbogie giving the fruit an intense minerality, Mac feels a touch of R/S puts this nicely back in balance.n n The Caveat Vineyard is where the fruit comes from, and it’s the first vineyard to get picked, with grapes full of natural acid and lending a lovely tension to the finished wine.
