The nose of this Champagne erupts with classic scents of peach, pear, honeycomb and yeast. It is crafted from 100% Chardonnay, grown in the Grand Cru plots of Chouilly in the Cote des Blancs, where the Legras-Haas family have made their home.nnThe winery was founded in 1991 by dynamic wine-making power couple François Legras and Brigitte Haas. However, the family have been growing grapes in the region for much longer than that. François and Brigitte’s three sons, who now run the winery, represent the sixth generation of grape growers to grace the fields of Northern France. Their range offers a classic taste of Champagne, rich, creamy and deeply satisfying.nnThis Blanc de Blancs has a fine, persistent perlage, which translates to an exciting, velvety mouthfeel. Look for flavours of fresh pear, honeysuckle, brioche and citrus rind on the palate, underpinned by a vibrant acidity. This Champagne is only produced in truly excellent vintages. It can be cellared for some time, but the creators recommend consuming this wine within 4 to 5 years, to fully appreciate its fresh character. Enjoy it as an aperitif, or alongside a selection of soft cheeses.
