After an exceptionally mild winter, the vines quickly resumed activity and saw their first buds burst on March 25. Under the effect of generous sunshine and high temperatures in spring, the vines developed frantically and the first flowers appeared on May 12.nFlowering is rapid and is completely finished on May 26. The heat sets in definitively for summer and veraison begins at the beginning of July. The scorching periods of late July and mid-August, as well as the water deficit, did not slow down the development of the maturity of the grapes which, on the contrary, progressed very quickly.nThe harvest begins at the Jacques Prieur estate on August 20 with the Pinot Noir vines of the Cote de Beaune and ends on September 2, an early date never before seen at the estate.nThe health status is perfect, the maturity excellent with a high level of acidity which can be explained by concentration phenomena occurring at the end of the maturation cycle under the influence of a hot wind blowing from the south and temperatures high.nnThe grapes are harvested by hand in small boxes then sorted, 100% whole harvests. Vatting lasted 18 days at controlled temperature in open wooden vats. We carry out punching down twice a day during the alcoholic fermentation. Malolactic fermentation is 100% carried out. Aging takes place 100% in oak barrels.n
