Domaine Boris Champy Vin Rouge Beaune Premier Cru Aux Coucherias 2020 750 ML

For this wine, Boris Champy used Pinot Noir from a west-facing plot in Aux Coucherias just outside Bouze-les-Beaune. The 1er Cru was planted in the 1950s, the site is very steep and characterised by dark loam and limestone. Champy knows the vineyard from his time at Louis Jadot; because the house produced the Clos de Couchereaux. With Champy, it’s the Clos Montchovet. The Clos is isolated by trees and gorse. The plot has been farmed biodynamically since 1985. The vine density is around 10,000 in Guyot cultivation. The grapes were harvested on 12 August. Boris Champy fermented the grapes to 60 % as whole clusters and aged them in barriques for over twelve months.
