Domaine Boris Champy Bourgogne Aligote Dore Selection Massale 2021 750 ML

This wine from Boris Champy comes from a vineyard with an old Selection massale the Aligote Dore or Golden Aligote. The attribute naturally refers to the colour of the berries. The plots are located in the Hautes-Cotes de Beaune at an altitude of over 400 metres. The soils are interspersed with limestone, calcareous marl and clay. The vines were planted very densely with 10,000 vines per hectare and trained in Guyot and Lyra. Their grapes were the last to be harvested on 10 October – ten days after the Hautes Cotes vineyards. The spontaneously fermented wine was aged for twelve months at 70 % in used barrels. Pieces on the yeast and aged to 30 % in stainless steel.
