Don Hipolito left his legacy behind for future generations to elaborate on making Consejo de la Alta a high quality wine producer in Rioja today. In 1835, Hipolito started working alone, and by 1941, a small group of people began helping him in the vineyards. He set up his cellar for wine production in 1846. He put a lot of effort, determination, tenacity, and hard work into the winery which helped him discover new blends that were shipped to several countries worldwide.
