Our Valley Oaks Cabernet Sauvignon leads with a deep ruby hue and engaging aromas of dark berries, spice, violets, and cassis. A multi-layered palate features supple blackcurrant, framed by subtle tones of mocha, caramel, and toast. Medium-firm tannins imbue the wine with structure, balance and depth, leading to a polished, lingering another strong, early vintage in California, the Cabernet grapes were harvested at peak ripeness and fermented in 100% stainless steel to preserve the vitality of the fruit. The wine was aged partially in tank and partially in barrel, a balance envisioned to complement the wine’s lively, fruit-driven profile with the premium toast notes and supple mouthfeel imparted by French and American oak.
